Sweet Spicy Shrimp Noodle Salad

Serious Foodie recently invited me to participate in their Blogger Recipe Competition and I decided to make a delicious Sweet + Spicy Shrimp Noodle Salad using their awesome Asian Fusion Sweet Spicy Rub and Vietnamese Sweet Chili Hot sauce.

Sweet + Spicy Shrimp Noodle Salad

This dish is an absolute flavour bomb!!! Featuring spicy grilled shrimp, served over rice noodles sauteed with infant kale and cilantro bathed in a sweet chili sauce.

First I sprinkled the spice rub on the shrimp and permit it sit in the fridge for about xv minutes to infuse the flavors. I grilled the shrimp in a grill pan for about 5 minutes until the shrimp were cooked through and had nice grill marks.

Then I sautéed the Shirataki noodles with the Sweet Chili Sauce, kale and cilantro for most v minutes or so until the kale was wilted.

To serve I added some pomegranate seeds for some juicy fruity season, and some chopped macadamia nuts for actress crunch, and additional cilantro and chopped chives for garnish.

Spicy + Spicy Shrimp Noodle Salad

The dish is an absolute flavor bomb featuring spicy grilled shrimp, served over rice noodles sauteed with infant kale and cilantro bathed in the sweetness chili sauce.

To serve top with pomegranate seeds for juicy, fruity flavor, chopped macadamia nuts for extra crunch, additional cilantro and chopped chives for garnish.

Ingredients

  • Cooking spray
  • 1 pound jumbo shrimp, peeled and deveined
  • 1 tablespoon Serious Foodie Spice rub
  • 1 package Shirataki noodles, rinsed and drained
  • 1/four cup Serious Foodie Sweet Chile Sauce
  • 2 handfuls baby kale
  • 2 tablespoons chopped fresh cilantro, divided
  • i/four cup macadamia nuts, chopped
  • 1/4 cup pomegranate arils
  • 1 teaspoon minced chives

Instructions

  1. Spray a grill pan with cooking spray and oestrus to medium-high rut.
  2. Sprinkle Serious Foodie rub on the shrimp and melt on the grill for 6 minutes, flipping halfway. Remove from the grill and set aside.

  5. Mix in the baby kale and 1 tablespoon of cilantro and melt until the kale is slightly wilted.
  6. Stir the shrimp back in to the noodle mixture and add additional sauce if desired.
  7. Serve on a platter and garnish with additional cilantro, macadamia nuts, pomegranate arils, and minced chives.

Notes

Blackened Scallops w/ Basil Butter Corn + Watermelon Jicama Salsa

Sam's Fresh Salsa started in the 70's on a family farm in New Bailiwick of jersey, and is even so going strong making succulent homemade salsas with only the freshest fruits, vegetables and ingredients.

Blackened Scallops w/ Basil Butter Corn + Watermelon Jicama Salsa

Their salsas have no preservatives or artificial ingredients, and are free of additives too. And they taste just like homemade; the kind you would find in an accurate Mexican eatery or made fresh at abode. They besides accept several other delicious salsa flavors such equally Cantina Medium Salsa and Salsa Verde, and a variety of fresh salsas ranging from Mild to Actress Hot.

Basil Butter Corn

Blackened Scallops with Grilled Basil Butter Corn + Watermelon Jicama Salsa

Ingredients

  • Grilled Basil Butter Corn:
  • ½ cup salted butter
  • ¼ loving cup torn fresh basil
  • one tablespoon fresh lime juice
  • Pinch of cayenne pepper or creole seasoning
  • four ears corn on the cob, unhusked
  • Oil spray
  • 1 modest shallot, chopped
  • Ocean common salt
  • Freshly cracked black pepper
  • Blackened Scallops:
  • two tablespoons clarified butter/ghee or canola oil
  • Sea table salt
  • eight ocean scallops (about 1/ii pound)
  • Blackening seasoning - (pre-fabricated or homemade)
  • 1 green onion, sliced, for garnish
  • Fresh basil, for garnish
  • 2-3 chunks fresh watermelon, diced, for garnish
  • Sam'southward Fresh Watermelon Jicama Salsa, for garnish

Instructions

  1. To make the Grilled Basil Butter Corn, cream the butter (room temp) with fresh basil, lime juice and cayenne pepper/creole seasoning; cover and let sit down for xxx mins to let the flavors meld together.
  2. Preheat grill over medium estrus and lightly oil the grates. Place the corn on the grill and cook with the encompass on for about 20-25 minutes until the corn is charred and tender. You can as well grill the corn in a grill pan on the stove or buy frozen pre-grilled corn kernels.
  3. Meanwhile, estrus some oil or butter in a bandage iron pan over medium heat and sauté the shallots until soft and golden brown, about 5 minutes. Set aside.
  4. Once corn is done, slice off the corn kernels with a large knife into a large mixing bowl. Toss the corn with the basil butter and sauteed shallots; season with salt and pepper to taste, set aside. Rinse the scallops and pat dry out.
  5. To cook the blackened scallops, raise the heat on the bandage iron pan to high until it begins to smoke. Brush the scallops on both sides with butter/ghee or oil and flavour with sea salt. Dredge each side of the scallops in the blackening seasoning in a medium shallow bowl. Place them in the hot pan spice side down. Hey folks, happy Tuesday! Just some other chilly January 24-hour interval here…I had a serious craving for some seriously practiced craven today so I made these Savory Pan-Seared Craven Thighs for lunch. Yous guys – these are the BOMB. And seriously tasty.

Dale's Steak Seasoning is my secret ingredient in this recipe – it's a savory marinade made with a blend of exotic spices, originating in Birmingham AL. I discovered in the early 90'south while living in Atlanta GA when my ex introduced me to it… we were grilling burgers out with some friends and allow'due south just say I got quite addicted to this delicious sauce verrryyy quickly – it was love at outset sight actually. Now I apply information technology on about EVERYTHING: chicken, steak, pork, burgers, and even grilled lamb or quail! It's gives such a rich flavor to anything you lot put information technology on, really and so you don't need a lot of extra seasonings when using it.

and then a dash of my other surreptitious ingredient, Trader Joe's Mushroom + Co Multipurpose Umami Seasoning, which is a blend of porcini and white button mushroom powder, sea salt, dried onion powder, ground mustard seed, crushed red pepper, blackness pepper, and dried thyme, that add tons of #UMAMI to the dish that I can't even describe.

Savory Chicken 2

Poke a few holes on each chicken thigh and mush it all over the craven with tongs and then let it all marinate in a large plastic baggie or mixing bowl in the fridge for well-nigh thirty mins.  So, pan-sear the chicken thighs in a large sauté pan over medium-high for five minutes on each side until crispy and browned, and the sauce gets a piffling syrupy and caramelized. (You tin can also bake or grill them of form if you prefer.) I absolutely beloved this place! Located right on Lake Ontario in Upstate NY (Webster) – this is the perfect spot to go in the Summer for fine dining, spirits and entertainment! I highly recommend the Lobster bisque, their signature Chicken French and the Sesame-Crusted Ahi Tuna seared to perfection and served with a teriyaki dipping sauce, garlic mashed potatoes and sautéed french greenish beans. The atmosphere is beautiful and elegant with a nautically-inspired interior design (with two levels and upshot spaces as well), an outdoor seated patio for dining, and a huge backyard with a gazebo and Adirondack chairs and picnic tables to merely sit down and gaze at the gorgeous lake and watch the sunset while sipping on a cocktail or drinking glass of wine. #Spring is here and #Summer is on the mode – and then hither's to eating lighter and healthier. My goal is to kickoff eating and cooking more than depression-carb and healthy recipes over the adjacent few weeks and months. (Enough of this #quarantinecooking and eating the whole closet full of carbs stuff already!)

Steakhouse Elite Grassfed Burgers

This Cheeseburger Salad is a mountain of deliciousness, and its #lowcarb #glutenfree, #keto, #whole30 and #atkins-friendly to boot! Fabricated with juicy grilled Steakhouse Aristocracy Grass-Fed Burgers (one of my clients and my favorite burgers in the world!) – they're thick, juicy, 90% lean, grass-fed and absolutely delicious!

Steakhouse Elite Grass Fed Burgers

Simply sprinkle the burgers with a little bit of olive oil, salt and pepper Montreal Steak seasoning and turn a grill upwards to loftier rut.

Grill burgers

Grill the burgers for about 8-10 minutes for medium-rare (less or more than to your liking and temperature.)   7. In a large salad or mixing bowl, add lettuce and mixed greens, salary, shredded cheese, halved tomatoes, and red onion slices, tossing salad together. Divide salad mixture between four medium bowls.
  8. Place the burgers on top of the salad and drizzle with Sriracha ranch dressing.

Notes

You can also substitute mayo for the ranch dressing or utilise blue cheese dressing without the sriracha and it's equally delicious. Or an Italian vinaigrette dressing with blue cheese crumbles which goes great with the bacon! Feel gratis to employ whatever lettuce you like - spinach, arugula, romaine, iceberg, mixed greens and play with any cheese yous similar too - Muenster and Monterey Jack or Gruyere are all keen melty cheeses that go smashing with burgers. Mediterranean Beef Kebabs west/ Tzatziki

These grilled Mediterranean Beef Kebabs are the perfect low-carb/Keto/Whole30-friendly dish made with lightly spiced Steakhouse Aristocracy Grass-Fed Basis Beef grilled on skewers. They're served with fresh tomatoes, cucumber, cherry onions, parsley, mint, and crumbled feta, and a side of homemade tzatziki sauce. Healthy, lite and delicious!

Ingredients

  • Beef KEBABS:
  • 1 medium onion, minced
  • 2 garlic cloves, minced
  • 1 loving cup fresh parsley, minced
  • 1 i/2 pounds Steakhouse Elite Grass-Fed Ground Beef
  • 1/2 cup finely ground almond flour + ane tablespoon water
  • Kosher Salt and Freshly Footing Blackness Pepper
  • four teaspoons Mediterranean or Greek seasoning
  • SIDE SALAD:
  • one large love apple, sliced
  • ane carmine onion, sliced
  • ane cucumber, sliced
  • Parsley, chopped
  • Mint, chopped
  • Feta Cheese, crumbled
  • TZATZIKI:
  • 3 Farsi, Kirby or ½ English cucumbers, cut into ¼-inch pieces
  • Kosher salt
  • 1 cup manifestly Greek yogurt
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • ane garlic clove, lightly crushed
  • ¼ cup chopped mint

Instructions

  1. Beef KEBABS:
  2. Soak 10 wooden skewers in water for about xxx minutes to 1 60 minutes, removing when ready to commencement making beef kebabs. Lightly oil a grill or grill pan and preheat to medium-high.
  3. Finely mince the onion, garlic, and parsley and identify in a large mixing bowl. Add the ground beef, almond flour/h2o mixture, salt and pepper and Mediterranean spices. Mix together with your hands until well combined. Alternatively, you can mince all the ingredients together in a food processor.
  4. Take a handful portion of the meat mixture and mold it on a wooden skewer into a long log-shaped kebab almost one inch broad. Repeat with the rest of the meat and skewers, laying them on a big baking sheet lined with parchment paper or foil.
  5. Place the beefiness kebabs on the grill and cook for 4 minutes on 1 side, turn over and melt for some other iii-four minutes.
  6. Serve the kebabs with a side salad made of sliced tomatoes, onions, cucumbers, parsley, mint and feta cheese with a side of tzatziki for dipping.
  7. TZATZIKI:
  8. Toss cucumbers with a few generous pinches of salt in a small basin; firmly squeeze several times with your hands to release excess h2o. Drain.
  9. Mix cucumbers, yogurt, oil, lemon juice, and garlic in a medium bowl; flavour with salt. Let sit at room temperature 15–20 minutes; discard garlic. Stir in mint just before serving.
  10. Practise Ahead: Tzatziki can exist made 2-3 days ahead (without mint). Cover and chill in the refrigerator, and add fresh mint just before serving.

Notes

Sweet and Spicy Chicken + Roasted Broccolini

Sometimes you need to spice things up in life a little. Specially to burnish upwards those belatedly Winter/early Spring dreary days when you're peckish#BBQ, until the gorgeous grilling weather is back in full swing!

These Sweet and Spicy Craven Thighs are the perfect remedy – bathed in a gorgeous gummy, spicy and sweetness glaze, made with Penzey's Northwoods Burn down Rub and Woodstock Everything Sauce  and a little honey and white balsamic vinegar for a groovy BBQ flavor with the convenience of the broiler.

Sweet and Spicy Chicken + Roasted Broccolini

I made some fresh and piece of cakeRoasted Broccolini with Garlic to go with the chicken, simply you could also serve them with the typical BBQ fixings: corn on the cob, baked beans, cole slaw, mac and cheese or fries. Black beans and rice would also be a not bad choice for a Caribbean flair. Or shred the craven and make some Spicy Sweet Chicken Tacos or BBQ Chicken Wraps or Pizza with the roasted broccolini…YUM!

Penzey's + Woodstead

Chef's Notes: Penzey's Northwoods Burn down Rub is a lovely spicy mixture of table salt, chipotle, black pepper, Hungarian paprika, garlic, rosemary, thyme, black pepper, and cayenne. If you aren't able to discover it or buy some,you can brand your own by using the following: 2 teaspoons garlic powder, 2 teaspoons chipotle or chili pulverisation, 1 teaspoon paprika, iii/4 teaspoon common salt, 1/ii teaspoon cayenne, 1/2 teaspoon black pepper, 1/ii teaspoon dried rosemary and 1/2 teaspoon dried  thyme. Kinda like a Dear BBQ mixed with the spicy rub for an extra boot!

Sweet + Spicy Chicken Thighs w/ Roasted Broccolini

These Sweetness and Spicy Craven Thighs are bathed in a gorgeous pasty, spicy and sweet glaze, made with Penzey's Northwoods Fire Rub and Woodstock Everything Sauce and a little beloved and white balsamic vinegar for a great BBQ flavor with the convenience of the broiler. Served with an easy, healthy and delicious Roasted Broccolini with garlic on the side.

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon Penzey's Northwoods Fire Seasoning
  • iii/4 teaspoon common salt
  • freshly ground blackness pepper, to taste
  • eight skinless, boneless craven thighs
  • 1/ii cup Woodstead Hot Anything & Everything Sauce
  • 2 tablespoons honey
  • 2 teaspoons white balsamic vinegar
  • Roasted Broccolini:
  • ii tablespoons extra virgin olive oil
  • ii bunches broccolini
  • ii garlic cloves, chopped fine
  • ii-3 tablespoons extra virgin olive oil
  • Body of water salt + fresh ground black pepper, to taste
  • Dash of cherry pepper flakes

Instructions

  1. Make the Sweet + Spicy Craven:
  2. Preheat the broiler.
  3. Drizzle the olive oil and sprinkle the Penzey's Northwoods Fire Seasoning over the craven thighs in a large mixing basin and toss to coat evenly.
  4. Place the chicken on a broiler pan coated with cooking spray and broil for five minutes on each side.
  5. Combine the Woodstead Hot Anything + Everything sauce with the honey and white balsamic vinegar in a small bowl, stirring together well.
  6. Remove the chicken from the oven and brush half of the sauce over the craven. Broil for 1 minute.
  7. Remove from the oven and turn the craven over. Brush the chicken with the remaining sauce and broil for an additional minute or until the chicken is cooked through and has crispy edges.
  8. Drizzle or brush any boosted sauce over the chicken if desired.
  9. Make the Roasted Broccolini:
  10. Preheat the oven to 375 degrees F.
  11. Trim 2 inches off the ends of the broccolini stems and place the broccolini in a single layer on a large sheet pan.
  12. Drizzle the broccolini with 2 tablespoons olive oil, sprinkle with minced garlic, ocean salt and black pepper, a dash of reddish pepper flakes, and toss together to glaze evenly.
  13. Roast broccolini for 15 minutes, until information technology is crisp-tender, and browned.
  14. Serve hot, immediately.

Notes

Chef'southward Notes: Penzey's Northwoods Burn Rub is a lovely spicy mixture of table salt, chipotle, black pepper, Hungarian paprika, garlic, rosemary, thyme, black pepper, and cayenne.   • two (8-ounce) NY Strip Steaks, i inch thick, trimmed
  • 1 teaspoon fibroid sea common salt (Maldon or Fleur de Sel)
  • 2 tablespoons cracked peppercorns (black or mixed)
  • one tablespoon 7 Barrels Truffle Olive Oil
  • two tablespoons unsalted butter, divided
  • i/3 cup shallots, finely chopped
  • ½ cup low-sodium beef broth
  • ii tablespoons Seven Barrels Traditional Dark Balsamic vinegar
  • Coarse sea common salt and chopped herbs, for garnish (optional)
  • Cheesy Truffle White potato Stacks Ingredients:
  • iv medium potatoes (Russet, Idaho or Yukon Gilt)
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon garlic powder (or ane garlic clove, minced)
  • ¼ cup butter, melted
  • ¼ loving cup Vii Barrels Truffle Olive Oil
  • ½ teaspoon kosher salt
  • Freshly ground blackness pepper
  • 1/2 cup Parmesan cheese, grated
  • 1/2 loving cup sharp white cheddar, finely shredded
  • Coarse sea common salt, for garnish
  • 2 tablespoons fresh herbs, chopped, for garnish (thyme, parsley or rosemary)
  • 1/4 cup Seven Barrels White Balsamic, for drizzling

Instructions

  1. Brand the Steak:
  2. Heat a big cast atomic number 26 skillet over high heat. Pat steaks dry out with paper towels and sprinkle with table salt evenly.
  3. Crack the peppercorns with the back of a heavy skillet or spice grinder (coarsely footing) and press onto both sides of the steaks.
  4. Add Seven Barrels Truffle olive oil and 1 tablespoon of butter to the bandage fe skillet; swirl to melt and coat the pan.
  5. Place the steaks in the heated skillet and cook iii minutes on each side (for medium-rare), drizzling olive oil and butter from the pan over the superlative of the steaks with a spoon while cooking to go a nice brownish sear. Remove the steaks from the pan and let residuum for v minutes to let juices resettle, then cut each steak in half.
  6. While the steaks are resting, add the shallots to the pan and sauté for a minute or two until slightly tender and golden.
  7. Stir in the beef broth and Seven Barrels Traditional Dark Balsamic vinegar, scraping the pan to loosen the browned bits. Bring to a eddy and cook for 2 minutes and reduce liquid by half. Remove from heat; stir in remaining tablespoon of butter to make the balsamic pan sauce. Garnish with boosted coarse sea salt and fresh herbs, if desired.
  8. Serve immediately with a side of vegetables (mashed potatoes, sautéed asparagus or green beans), a simple mixed greens salad with 7 Barrels olive oil and balsamic vinegar, and a glass of full-bodied ruddy wine (Cabernet Sauvignon).
  9. Make the Cheesy Truffle Spud Stacks:
  10. Preheat the oven 400 degrees F.
  11. Wash potatoes and cut them into very thin slices (about 1/8-inch), leaving skins on. You lot can do this by mitt, or use a mandolin to brand slicing easier and faster.
  12. In a large mixing basin, add the potatoes, dried Italian seasoning, garlic, melted butter, Vii Barrels Truffle Olive Oil, kosher table salt and blackness pepper, grated Parmesan cheese and gently toss together.
  13. Layer half the potatoes stacked in layers into a non-stick 12-cup muffin pan (or lightly grease a muffin pan), sprinkle half the shredded cheddar on top. Then layer the other half of the potatoes, stacking them to the top and add together remaining shredded cheddar on top.
  14. Cover with foil and place on a baking sheet. Transfer to the oven and roast for 30 minutes. Remove the foil and continue cooking another 20-25 minutes or until the potatoes are crispy gilt brown on edges and cooked through. Run a small knife around the edges of the of each stack to release them from the muffin pan.
  15. Serve potatoes hot with a sprinkle of body of water salt and chopped herbs, and drizzle them with Seven Barrels White Balsamic vinegar. Note: You tin pre-bake these a day or two ahead and reheat them in the oven for x-15 minutes on 350 degrees F.

Things I Love August 2017

Hey guys! Tin you believe Summertime is nearly halfway over (or more??) Time really does fly when you're having fun, doesn't it! Summer is truly my favorite flavor and as August rolls in, I've had a great one so far! Lots of trips to see family and friends in Upstate New York, my guy down in South Florida and West Coast Florida to St Petersburg and Clearwater Beach, and fun weekends in the city and beaches in NYC.

As much as I love the embankment and warm weather and sunny days, I start thinking about the crisp Autumn days ahead – and all the delicious comfort nutrient recipes and seasonal produce coming into play that makes my heart skip a shell..cozy soups, fresh gorgeous salads and hearty casseroles and pies and roasted dinners..mmmmm. But wait..it'due south only August…

Then to celebrate the season, here's a few shoutouts to some of the amazing and fun places, people, recipes and things I've been loving on this Summertime – it's not quite over nonetheless! Hope you're having a fantastic one yourselves and getting enough of succulent bites and drinks, travel, quality time with friends and family, and some sun, sand and surf in besides.

I recently visited Boston's Sand Bar in Delray Embankment with my fellow after a day at the embankment and what a fun place this is! They have great happy 60 minutes specials everyday with 1/2 price beer, wine and cocktails and beach bar bites similar Smoked Fish Dip, Conch Fritters, Peel and Swallow Shrimp, Mojitos and Margaritas.

Definitely a fun casual spot with a Tiki Bar and beach vibe for a relaxing weekend afternoon in the lord's day on the patio…cornhole, music, beach, cocktails, sun, loungy couches…what else can yous inquire for?

The scents are amazing and made with all natural ingredients – I absolutely Dearest their Sandalwood lather and Tobacco Leafage & Amber candle. Divine.

Harpoon Harry'southward, Punta Gorda FL

My boyfriend and I stopped in here last infinitesimal on our way back home from St Pete, FL 1 nighttime to accept a quick break from driving and make a pit finish. We stumbled upon the boondocks of Punta Gorda, a sleepy footling marina town in Florida and discovered the Fisherman's Village on Charlotte Harbor, where this place is located, and it had the most stunning sunset and waterside views I've seen in quite a while. It's a fun, casual bar and restaurant (think Popcorn Shrimp, Crab Cakes, Raw Oyster Bar and Grouper Sandwiches – yum!) and definitely worth a stop if y'all're driving downwards the coast of W Florida. They fifty-fifty have this amazing Body of water Cream saccharide scrub in the bathrooms to add to the ambience.

yeahhhhhh…I think I could live here 😉

This is 1 of my favorite Summertime recipes ever. I created information technology for my client 7 Barrels, with their delicious Sweet Basil Olive Oil and Balsamic Vinegar to make a gorgeous fresh lycopersicon esculentum sauce with garlic and onions and then topped information technology the pasta with fresh basil, ricotta and parmesan cheese. Then easy and light – it'southward truly Summer in a Basin.

The Classic Eastward concert, Citifield NYC

A few weekends ago my Sis came to town for The Archetype E concert which was astonishing! All the archetype 70's bands were playing over 2 days out at Citifield stadium. We saw Journeying, The Doobie Brothers, Fleetwood Mac, Earth Current of air and Burn, Steely Dan and The Eagles! All my favorite bands on the planet!!!

Dim Sum at Grand Eating place, Flushing NY

On Sunday that same weekend, we decided to meet up with my Aunt Bonnie and Uncle Jim for some Dim Sum at the Yard Eating place in the New Urban center Mall in Flushing, (Chinatown in Queens). If y'all have never had Dim Sum before, y'all're in for a care for! They basically sit yous downward at a large tabular array and the servers come up by with rolling carts total of Chinese appetizers and pocket-size plates and you guild whatever you want off the cart and they tally upwards your neb as y'all get! We had delicious dumplings in all flavors, fried shrimp, sautéed Bok Choy, a delicious Coconut Gel, Mango Rice Pudding and Custard Egg Tarts for dessert. So delish and fun! But beware, all those pocket-size bites add upward fast!

Another fun identify my BF and I discovered on our little road trip down the West coast of Florida a few weeks ago for his birthday. It's a fun crab shack nestled on the coast of Naples, where you can eat to your heart's content a massive amount of fresh seafood at Happy Hour from 4-seven pm. 1/2 price drinks and super inexpensive goodies like peel & consume shrimp, clam chowder, crab legs, and raw oysters for $ane with a killer view on the water? Fork, yeah.
